Why is the wind direction plotting like this all of a sudden?

I have also noticed this, it has been doing this for about a week as I recall.

Is there a setting to squelch this a bit?

i have the wind dirrection beign plotted now, when it was not before, BUT you can set it to not display, by clicking on setup, and not having it ticked to display, and then click on set

note:
if the direction is around the northerly, it will swing from side to side
also, you can set the colours, etc
and gregm unfortunatly the dallas win direction is only 16 points, so its blocky
